Carrot Cake Overnight Oatmeal

Hot oats have got to be one of the best comfort foods ever!

I believe in eating right for your macronutrient profile to make you feel so much better (I recommend you Google it! Or send me a message, it’s pretty easy to explain). So, for me, that’s protein, veges and healthy fats at every meal and snack. So breakfast is no exception! There are no bowls of Cornflakes in this household – did you know they raise your blood sugar levels even more than sugar!  Not something I want to give my family!!

Usually we’re about eggs with green veges and sauerkraut but sometimes you just need a change + my daughter loves oats!

Carrot Cake Overnight Oatmeal

  • 1/2 cup Rolled Oats
  • 1 cup Nut Milk (coconut milk is amazing)
  • 1 heaped teaspoon Nut Butter (ideally almond butter if you have it)
  • 1 teaspoon Cinnamon
  • 1 teaspoon Ginger
  • 1 Grated carrot
  • Vanilla protein powder (as I said, I need protein at every meal but this is optional)
  • Sprinkle of walnuts
  • Sprinkle of raisins

Combine all ingredients (except raisins and walnuts) into a bowl, stir well and then place in the fridge overnight. In the morning all you need to do is get out your desired serving size and heat.

Then top with raisins, walnuts and sliced banana. Pineapple would also be amazing to add to this in summer, or toasted coconut chips. Yum!

So easy and such a nutritious start to the day! If you didn’t want to use oats, you could also try with using ancient grains such as millet.
