The Superfood Series: bought to you by GO Superfood. Easy ways to get extra nutrients into your fussy little eaters.
My daughter is a big fan of two food groups – dairy and carbs. Typical toddler, really! But nutrition is something I am so interested in and I truly believe that what we eat is reflected in our health and how we feel in our day to day lives. So for this reason, it’s really important to me to introduce my daughter to a wide range of healthy foods and each her the importance of eating real food early on.
Because she really enjoys yoghurt, I thought I’d try her on chia seed puddings as an alternative. And woohoo she loves them! I’d tried loads of different flavours but I wanted to share something a bit different today.
Keep reading for the recipe!
Berry Beetroot Chia Seed Puddings
- 1/3 cup chia seeds
- 1 1/2 cup unsweetened almond milk
- 1 tablespoon pure maple syrup or rice malt syrup (optional)
- 2 teaspoons GO Superfood Beetroot Powder
- 2 teaspoons GO Superfood Coconut Water Powder
- 1 scoop vanilla protein powder (optional)
- a handful of your favourite berries
If you like a really smooth pudding, you can pop all of the ingredients into the blender and whiz it up. Then pour into a container to set. Or use a fork to whisk it all together and then you can the little chia seeds to chew on too. Both ways are really yummy.
Once it’s set (in about 4 hours, or just leave it overnight) then you can eat as is, or top with some yummy toppings. We love these with extra berries on top, some sliced banana and sliced date logs, if you have these in the fridge.
So, what Superfoods are in these puddings and what are their benefits?
Chia Seeds: a fantastic source of essential fatty acids and protein. They’re a great source of energy and are fantastic for gut health.
Beetroot Powder: loaded with antioxidants, magnesium, iron and vitamins. Detoxes the body and helps to maintain healthy blood circulation and provide stamina.
Coconut Water Powder: is a natural electrolyte to keep your hydrated. Add this powder to baking, smoothies, juices or just into water for a little hydration boost.
